Hungarian Bocuse d'Or Academy organized the aftergrowth contest on November 26th. The winner is Levente Lendvai from Arany Kaviár Restaurant.
Bringing up the aftergrowth is a very important mission for Hungarian Bocuse d'Or Academy. This is the second time, that the academy organized this contest. Two years ago the winner was Kevin Szabó, so there's no doubt that for a student with ambitions it worths to take part in it.
In the contest all the competitors got a "surprise basket" full of ingredients, and they had to make two dishes (it's not a must to use all the ingredients). The first plate must have been presented in 100, the second in 130 minutes. Frigyes Vomberg, Tamás Vajna and Kevin Szabó were the kitchen jury, and Zoltán Hamvas, Szabina Szulló, Lajos Lutz, Viktor Varjú, Viktor Segal and Csaba Harmath were the tasting jury.
The winner was Levente Lendvai from Arany Kaviár Restaurant. His first dish was a salmon tartar with coriander, savored with citrus, with fresh seasoning, and crumb made from the skin of the fish. His second plate was a duck duo with caramelized leek, marinated apple and parsley sauce. Patrik Kocsis from Erhardt took the second, and Richárd Csillag from Kistücsök the third place.
This is also the official start of the Bocuse d'Or season in Hungary. The next step is the Hungarian Selection on December 3rd.
